Recipes / BULGUR SALAD WITH CHICKEN AND VEGETABLES

250 gr chicken meat (thighs), cut in small cubes
1 cup fine “köfte” bulgur
1 red pepper, chopped fine
1 zucchini , chopped in small cubes
1 dessert spoon Green Life Garlic Powder
1 dessert spoon Green Life Onion Powder
7-8 sprigs parsley, chopped fine
7-8 sprigs mint, chopped fine
Olive oil
Juice of half a lemon
Salt

Place the bulgur in a bowl and add 1 cup of hot water and mix. Heat 2 tablespoons of olive oil in a pan and add the chicken. Add Green Life Garlic Powder, Green Life Onion Powder and a pinch of salt and fry for several minutes. In another pan heat 2 tablespoons of olive oil and fry the zucchini and peppers. Mix the chicken, zucchini, peppers, parsley and mint in the bowl that the bulgur is in and mix. Drizzle a little more olive oil and lemon and add salt. Mix and serve warm.
